By default, the shift-z key combination turns on and off a display of flight and fps information (screen frames per second - a measure of how quickly FS is displaying the graphics on the screen. The higher the fps, the smoother your flight appears) in the top left corner of the screen. Hit it once and you can see lat/long, wind, airspeed and other information. Hit it again and you will see your current fps. Hit again and you will see both the flight and fps information. Hit it one more time and it turns the display off.
FS Lead Designer Paul Lange recently blogged about how to modify how the information is listed here. For instance, if you'd rather see lat/long displayed in decimal format instead of hours minutes seconds format, or you would like to split the data up over multiple lines, or switch the order of display, his article describes how to do that.
